Vegetable Pilaf
Prep Time: 20 minutes
Cooking Time: 35 minutes
Serves 4
Ingredients:
1/4 cup olive oil
1 onion, sliced
2 cloves garlic, crushed
2 ts ground cumin
2 ts paprika
1/2 ts allspice
1 1/2 cup rice
1 1/2 cup veggie stock
3/4 cup white wine or vinegar
3 tomatoes, chopped
5 oz mushrooms, sliced
2 medium zucchini, sliced
5 oz broccoli, chopped
Directions:
1. Heat oil in heavy based stock pot. Add onion, cook for 10 minutes over medium heat. Add garlic and spices, cook 1 minute.
2. Add rice to the pan, stir until well combines. Add veggie stock, wine, tomatoes, and mushrooms; bring to a boil. Reduce heat to low, cover the pot and simmer for 15 minutes.
3. Add zucchini and broccoli, replace lid and cook 5 more minutes. Serve immediately.
