It is as though the mint smooths out the slight tartness of the olives. They just both work really well together. Time: 5 minutes Cooking Time: 35 minutes Serves 4 Ingredients: 2 TB olive oil 4 chicken breasts 2 TB cumin 2 TB tumeric 1 TB ground coriander salt pepper 3 garlic cloves, minced 4 cups chicken stock 1/4 cup mint, chopped 1/4 cup kalamata olives, chopped 3 cups couscous 1/2 pound cherry tomatoes, halved Directions: 1. Combine olive oil, cumin, tumeric, ground coriander, salt and pepper and garlic. Rub seasoning over chicken breasts. 2. Heat large deep skillet over high heat. 4.  Add the remaining ingredients and cook for 7-10 more minutes or until the liquid evaporates. </p>

Heat oven safe skillet over high heat. When pan is hot, add olive oil. When oil is hot, add onions and cook 3 minutes. 2. Add garlic and cook 30 seconds. Add zucchini and flour and mix thoroughly. Continue cooking and stirring occassionally until zucchini is golden brown. 3. Beat eggs, salt and pepper in mixing bowl. Add ricotta, yogurt and parmesan. Mix well. 4. 1 large zucchini, chopped<br />
2 TB olive oil<br />
1 TB flour<br />
6 eggs<br />
2 TB oregano<br />
1 ts salt<br />
1/2 ts black pepper<br />
1/2 cup ricotta cheese<br />
1/2 cup yogurt<br />
1/4 cup grated parmesan<br />
1/4 grated cheese</p>
<p><strong>Directions:</strong></p>
<p>1.  Heat oven safe skillet over high heat.  When pan is hot, add olive oil.  When oil is hot, add onions and cook 3 minutes.<br />
2.  Add garlic and cook 30 seconds.  Add zucchini and flour and mix thoroughly.  Continue cooking and stirring occassionally until zucchini is golden brown.<br />
3.  Beat eggs, salt and pepper in mixing bowl.  Add ricotta, yogurt and parmesan.  Mix well.<br />
4.  Add egg mixture to hot skillet and mix everything together.<br />
5.  Place your oven safe skillet into a preheated 350 degree F oven.  Cook 30 minutes.</p>

<p>Sweet Potato Ravioli in Garlic Cream Sauce</p>
<p>Prep. Time:  30 minutes<br />

Serves 4</p>
<p><strong>Ingredients:</strong><br />

1/4 cup olive oil<br />
5 oz. ricotta cheese<br />

<p><strong>Directions: </strong><br />

Place another won ton wrapper on top and press all four edges together.  Place on baking sheet with wax paper, cover with damp towel.  Repeat this until your filling is gone.<br />
4.  Melt butter in skillet.  Add green onion and garlic.  Cover and cook 1 minute.  Add cream and bring to boil, reduce heat and simmer 5 minutes until cream sauce is thickened.<br />
5.  Bring a large sauce pan of water to a boil.  Cook ravioli in batches 3 minutes each.  Drain and place on serving plates.  Cover ravioli with hot cream sauce and serve.</p>

6.  Turn off heat and add butter.<br />
7.  Divide carrot rice among 4 plates.  Place sliced chicken on top of rice.  Top chicken with Leek Lime Sauce. </p>

<p><strong>Lemon Chicken</strong></p>
<p>Serves 4</p>
<p>Prep Time: 5 minutes PLUS 2 hours marinating</p>
<p>Cooking Time: 1 hour 10 minutes</p>
<p><strong>Ingredients</strong></p>
<p>3-4 pounds chicken parts (thighs and legs recommended), skin-on, bone-in, trimmed of excess fat<br />
2 Tbsp lemon zest<br />
1/3 cup lemon juice<br />
2 cloves garlic, crushed<br />
2 Tbsp fresh chopped thyme (or 2 teaspoons dried)<br />
1 Tbsp fresh chopped rosemary (or 1 teaspoon dried)<br />
1 teaspoons salt<br />
1 teaspoon black pepper<br />
2-3 Tbsp melted butter<br />
Lemon slices for garnish</p>
<p><strong>Directions</strong></p>
<p>1 Place lemon juice, lemon peel, garlic, thyme, rosemary, salt, and pepper in a small bowl, whisk to combine. With the tip of a sharp knife, cut into each chicken piece one or two times by about 1/2 an inch. (This will help the marinade penetrate.) Place the chicken pieces and the marinade in a gallon-sized freezer bag. Rotate the bag so that all chicken pieces are coated with the marinade. Seal the bag and place in a bowl in the refrigerator (in case of leakage). Let marinate for 2 hours.</p>
<p>2 Preheat oven to 425 degrees F. Remove chicken from marinade and place in a single layer in a large baking dish, skin side up. Reserve the marinade. Use a pastry brush to brush a little melted butter on to each piece of chicken.</p>
<p>3 Bake for a total of 50 to 55 minutes, until the skins are crispy brown, and the chicken is cooked through, juices running clear. Half-way through the baking, at about the 25 minute mark, baste the chicken pieces generously with reserved marinade.</p>
<p>Depending on the size of the breasts, they may be ready before the thighs, so if you are cooking a mix of chicken parts, keep that in mind, you may have to take them out of the oven before the thighs.</p>
<p>Let rest, covered in foil, for 10 minutes before serving.</p>
<p>4 Pour the juices from the pan into a serving bowl. Use a tablespoon to skim the fat off the top (save the fat for cooking with later, or discard, but do not discard down the drain or it will solidify and clog your drain). Serve the chicken with the juices on the side or a little poured over the top of the chicken.</p>
<p>Serves 4-6. Serve alone or with steamed rice.</p>

		<description><![CDATA[I have been sticking with tomato based pasta sauces for a while, but wanted to shake things up a bit with a cream based sauce. It is a great way to get yourself to eat some more spinach! Cream of Spinach Pasta Serves 4 Prep. Time: 5 minutes Cooking Time: 15 minutes Ingredients: 3/4 cup butter 1 clove garlic, minced 1/2 onion, chopped 1 lb. frozen spinach 1 lb. pasta of your choice 1 1/2 cups grated Parmesan Cheese 1 cup milk pepper Directions: 1.  In a medium-sized skillet, melt half the butter and add the garlic and onion. Cook until golden but not browned. Add the spinach and partially cover the pan until the spinach has heated through. 2. Meanwhile, cook the noodles according to the package directions. Drain the pasta and return it to the pot. Toss it with the remaining butter, the spinach mixture, cheese, and cream until all are blended and heated through. <p><strong>Cream of Spinach Pasta</strong><br />
Serves 4<br />
Prep. Time:  5 minutes<br />
Cooking Time:  15 minutes</p>
<p><strong>Ingredients:</strong><br />
