<p>Chickpea and Tomato Soup with Dumplings</p>
<p>***Vegetarian Recipe***</p>
<p>Serves 4</p>
<p>Prep. Time: 10 minutes</p>

<p><strong>Ingredients:</strong></p>
<p>1 TB olive oil</p>
<p>1 onion, chopped</p>
<p>2 garlic cloves, minced</p>
<p>2 ts garam masala</p>
<p>1/2 ts chili powder</p>
<p>2 cans (15 oz. each) chickpeas, drained</p>
<p>2 cups vegetable stock</p>
<p>1 15 oz. can tomato sauce</p>

<p>2.Â  Add the chickpeas, stock, tomato sauce and chopped tomatoes.Â  Bring to a boil, lower heat to a simmer, cover and cook for 10 minutes.</p>
<p>3.Â  While the soup cooks, make your dumplings.Â  Sift the flour into a bowl and add the chopped butter.Â  Rub the butter into the flour with your fingers until it becomes like breadcrumbs.Â  Stir in the cheese and herbs.</p>
<p>4.Â  Make a well in the center of the bowl.Â  Pour milk into center.Â  Use a knife to mix the milk and flour mixture together.Â  Roll the dough into 8 balls.</p>
<p>5.Â  Drop the dumplings into your soup and cook for another 20 minutes.Â  Dumplings are finished when a toothpick comes out clean.</p>

Time: 5 minutes Cooking Time: 25 minutes Ingredients: 2 TB butter 1 onion, chopped 2 garlic cloves 1 TB ground coriander 1 TB ground cumin 1 ts ground cayenne pepper 1 ts ground turmeric 2 15-ounce cans chopped tomatoes 2 15-ounce cans chickpeas, rinsed and drained 1 ts paprika 1 ts garam masala 1 ts salt Juice of 1/2 lemon 1 jalapeno, stemmed, seeded, and chopped 2 ts ginger, grated Directions: 1. Cook 2 cups rice as normal, just add 2 TB of tumeric to the rice. 2. Heat large skillet over medium heat; add butter and melt. ***Vegetarian Recipe***</p>
<p>Serves 4<br />
Prep. Time: 5 minutes<br />

<p>2 TB butter<br />
1 onion, chopped<br />

5. Add the chickpeas; stir until combined and then bring mixture to a boil.<br />
6. Reduce heat to a simmer. Add the paprika, garam masala, salt, and lemon juice. Cover and cook at a simmer for 10 minutes.<br />
7. Serve over rice.</p>

<p>Balsamic Chicken with Spinach and Quinoa<br />
Serves 4<br />
Prep. Time: 10 minutes<br />
Cooking Time: 30 minutes</p>

4 TB olive oil<br />

4.  To serve:  Spead quinoa on the bottom of a plate.  Top half with spinach.  Place sliced chicken on the other half and pour tomato sauce over the chicken.</p>
