Quinoa with Collard Greens and Bacon Serves 4 Total Time: 20 minutes Ingredients: 1 cup uncooked quinoa 1 tsp. olive oil 4 slices bacon, sliced and diced in 1/4-inch pieces 1/2 onion, chopped 2Â cupsÂ chicken stock 1 TB sage 2 TB chives and parsley, chopped salt and pepper 2 cups frozen collard greens 2-3 Tbs Water 1 Pinch Salt 1 tsp Lime Juice Directions: 1.Â  Rinse quinoa in a strainer. 2.Â  Heat oil in medium pot and add bacon. Cook bacon 2 minutes, stirring constantly.Â Add onions and stir over medium heat for 1 minute.Â Add rinsed quinoa, chicken stock, salt and sage. Bring to a boil. 3. Add collard greens and lime juice to pot.Â  Turn down to a low simmer; cover and cook for 17 minutes. 4.Â  When quinoa is cooked let it rest for 5 minutes before serving. <p><strong>Ingredients:</strong></p>

<p><strong>Directions for Torte:</strong></p>
<p>1.  Preheat the oven to 375 degrees F.<br />
2.  In a skillet over medium heat, cook the bacon until just crispy. Drain on paper towel lined plate and set aside.  Add garlic to bacon pan and cook for 1 minute.<br />
3.  Meanwhile, in a small saucepan, heat the thyme and cream over low heat to a bare simmer. Turn off the heat and let steep for about 5 minutes. Remove the thyme sprigs.<br />
4.  Remove the pie pan from the refrigerator. Slice the potatoes in half lengthwise and then finely slice the potatoes. Working in circles, arrange the potato slices in the pie crust, stopping to season each layer with salt, pepper, garlic and about 1/4 of the crumbled bacon.<br />
5.  Continue layering until the pie pan is nearly full. Top with an even layer of the cheese and gently pour cream around and over the entire pie, allowing it to seep down between the potato slices.<br />
6.  Roll out the remaining disk of refrigerated dough. Cover the pie with the dough and crimp the edges closed. Brush the top and edges of the crust with egg wash. Make a few slits in the center of the top crust, for the steam to escape, and put the pie pan on a baking sheet.<br />
7.  Bake the torte until the crust is browned and crispy and the potatoes are cooked through, about 50 to 60 minutes. If the crust edges get too brown, cover them with some strips of aluminum foil.<br />
8.  Remove the pie from the oven and let rest at least 15 minutes before cutting into wedges and serving.</p>

<p>Prep. Time:  30 minutes + 1 hour refrigeration<br />
Cooking Time:  40 minutes<br />
Serves 4</p>
<p><strong>Ingredients:</strong><br />
1.75 pounds potatoes, halved<br />
2 oz butter<br />
6 slices bacon, chopped<br />
1 red onion, chopped<br />
2 cloves garlic, crushed<br />
2 TB parsley, chopped<br />
1 ts oregano<br />
1 ts thyme</p>

<p><strong>Directions:</strong><br />
1.  Boil potatoes until tender.  Drain, cover and refrigerate for 1 hour.  Peel the potato and grate into a bowl.<br />
2.  Heat half the butter in a 9 inch heavy based non-stick frying pan.  Add bacon, onion, and garlic.  Stir for 2 minutes.  Add to the potato.  Add the herbs and mix well.<br />
