Caesar Pasta with Romaine and Parmesan

Serves 4
Prep. Time: 10 minutes
Cooking Time: 15 minutes
Ingredients:
2 TB salt
1 lb. Linguine
½ cup olive oil
6 anchovy fillets, minced
1 TB capers, rinsed and drained
3 garlic cloves, minced
3 heads of romaine, washed and bases removed
½ tsp. Black pepper
¼ cup lemon juice
½ cup Parmesan
Directions:
- Bring large sauce pan filled with water to a boil. Add salt.
- Add pasta to sauce pan and cook it 8-10 minutes (al dente). When you drain the pasta, save ½ cup of pasta water.
- When your pasta has 5 minutes left to cook, heat olive oil in a large saute pan. Add anchovies and capers to high heat and cook for 3 minutes. Add garlic, lettuce, pepper, lemon juice.
- Saute until lettuce just wilts. Stir in cooked linguine and Parmesan. Season with salt and pepper to taste.
